Description

 Quick, chewy, and chocolatey no bake cookies made with cocoa, peanut butter, and oats. A nostalgic treat ready in minutes without the oven.


Ingredients

  • 1/2 cup unsalted butter

  • 1/2 cup milk

  • 2 cups granulated sugar

  • 1/4 cup unsweetened cocoa powder

  • 1/2 cup creamy peanut butter

  • 1 teaspoon vanilla extract

  • 3 cups old-fashioned oats


Instructions

  1. Line a baking sheet with parchment paper and set aside.

  2. In a medium saucepan, combine butter, milk, and sugar. Bring to a boil over medium heat, stirring often.

  3. Once boiling, cook for 60–90 seconds without stirring, then remove from heat.

  4. Stir in cocoa powder, peanut butter, and vanilla until smooth and combined.

  5. Add oats and mix until fully coated.

  6. Drop spoonfuls of the mixture onto the prepared baking sheet.

  7. Let cookies cool at room temperature until firm, about 20–30 minutes.

Notes

Store in an airtight container at room temperature for up to 5 days, or refrigerate for up to 2 weeks. Freeze for longer storage and thaw before serving.
