Ingredients

8 slices sourdough or brioche bread

12 slices thick-cut bacon

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup Monterey Jack cheese, shredded

4 tablespoons unsalted butter, softened

Optional: caramelized onions, pickles, or hot sauce
Instructions

Cook bacon in a skillet over medium heat until crispy, then drain on paper towels.

Spread butter on one side of each bread slice. Place half the slices butter-side down on a cutting board.

Layer cheddar, mozzarella, and Monterey Jack evenly over the bread, then top with bacon and optional add-ins.

Place remaining bread slices on top, buttered side facing out.

Heat a skillet or griddle over medium-low heat. Cook sandwiches 3–4 minutes per side until bread is golden and cheese is melted.

Rest for 1 minute, slice diagonally, and serve warm.
Notes
For extra crispiness, spread mayonnaise instead of butter. Serve with tomato soup, salad, or fries. Store leftovers in the fridge up to 2 days; reheat in a skillet.
