- 12 cups salsa, divided
- 4 (8-ounce) packages cream cheese, softened
- 16 stalks green onions, chopped, divided
- 10 cups Cheddar cheese, divided
- 10 cups shredded Monterey Jack cheese, divided
- 48 (8-inch) flour tortillas
Instructions
- Preheat your oven to 375°F (190°C).
- Spread 1 cup of salsa over the bottom of a large baking dish.
- In a mixing bowl, combine cream cheese, half of the chopped green onions, 5 cups of Cheddar cheese, and 5 cups of Monterey Jack cheese.
- Spoon the mixture into the center of each tortilla and roll tightly.
- Place the tortillas seam-side down in the baking dish.
- Pour the remaining salsa evenly over the enchiladas.
- Sprinkle the rest of the Cheddar and Monterey Jack cheese on top.
- Bake uncovered for 30-35 minutes or until the cheese is bubbly and golden.
- Garnish with the remaining green onions before serving.
