  • 16 stalks green onions, chopped, divided
  • 10 cups Cheddar cheese, divided
  • 10 cups shredded Monterey Jack cheese, divided
  • 48 (8-inch) flour tortillas

Instructions

  • Preheat your oven to 375°F (190°C).
  • Spread 1 cup of salsa over the bottom of a large baking dish.
  • In a mixing bowl, combine cream cheese, half of the chopped green onions, 5 cups of Cheddar cheese, and 5 cups of Monterey Jack cheese.
  • Spoon the mixture into the center of each tortilla and roll tightly.
  • Place the tortillas seam-side down in the baking dish.
  • Pour the remaining salsa evenly over the enchiladas.
  • Sprinkle the rest of the Cheddar and Monterey Jack cheese on top.
  • Bake uncovered for 30-35 minutes or until the cheese is bubbly and golden.
  • Garnish with the remaining green onions before serving.
