Description

Ingredients

  • 6 large potatoes, peeled and quartered
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/3 cup chopped onion
  • 1 large egg
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • Additional shredded cheddar cheese, optional

Instructions

    1. Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash.
    2. In a mixing bowl, combine the cream cheese, cheddar cheese, sour cream, chopped onion, egg, salt, and pepper.
    3. Fold the mashed potatoes into the cheese mixture until well combined.
    4. Transfer to a greased baking dish. Top with additional shredded cheddar cheese if desired.
    5. Bake at 350°F for 30 minutes or until golden and bubbly.
