- 6 large potatoes, peeled and quartered
- 1 package (8 ounces) cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/3 cup chopped onion
- 1 large egg
- 2 teaspoons salt
- 1/2 teaspoon pepper
- Additional shredded cheddar cheese, optional
Instructions

- Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash.
- In a mixing bowl, combine the cream cheese, cheddar cheese, sour cream, chopped onion, egg, salt, and pepper.
- Fold the mashed potatoes into the cheese mixture until well combined.
- Transfer to a greased baking dish. Top with additional shredded cheddar cheese if desired.
- Bake at 350°F for 30 minutes or until golden and bubbly.
