Description

A vibrant and flavorful salsa combining sweet corn, bell peppers, and a hint of heat from jalapeños and crushed red pepper.

 


Ingredients

  • 1 (15.25 ounce) can sweet corn, drained
  • 1 orange bell pepper, chopped
  • 1 red onion, chopped
  • 1 jalapeño pepper, seeded and minced
  • 1 tablespoon chopped fresh cilantro, or more to taste
  • 1 tablespoon fresh lime juice, or to taste
  • 1 teaspoon honey
  • ½ teaspoon crushed red pepper
  • Salt and black pepper to taste

Instructions

  • In a large bowl, combine the drained corn, chopped bell pepper, and chopped red onion.
  • Add the minced jalapeño, chopped cilantro, lime juice, and honey.
  • Sprinkle in the crushed red pepper, salt, and black pepper. Mix well.
  • Adjust seasoning to taste with additional lime juice, salt, or honey as needed.
  • Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Notes

  • For a smoky flavor, grill the corn and bell pepper before chopping.
  • Adjust the level of heat by adding more or less jalapeño and crushed red pepper.
