A festive twist on classic blondies, these Ultimate Christmas Blondies are loaded with white chocolate, raisins, and almonds for a delightful holiday treat that’s perfect for sharing.

- 125g butter, chopped
- 400g white chocolate, chopped
- 215g (1 cup) caster sugar
- 3 eggs, lightly beaten
- 2 tsp vanilla extract
- 150g (1 cup) self-raising flour
- 75g (½ cup) plain flour
- 80g (2/3 cup) almond meal
- 235g (1 1/3 cups) Sunbeam Raisins
- 50g (1/3 cup) Sunbeam Slivered Almonds
- Icing sugar, to serve
Instructions
- Preheat your oven to 180°C (350°F). Line a 20x30cm baking pan with parchment paper.
- Melt the butter and white chocolate together in a bowl over simmering water until smooth. Let it cool slightly.
- Add the caster sugar, eggs, and vanilla extract to the melted mixture. Stir until well combined.
- Fold in the self-raising flour, plain flour, and almond meal until smooth. Mix in the raisins and slivered almonds.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes or until a skewer comes out clean. Let it cool completely before dusting with icing sugar.
