Description

A festive twist on classic blondies, these Ultimate Christmas Blondies are loaded with white chocolate, raisins, and almonds for a delightful holiday treat that’s perfect for sharing.


Ingredients

  • 125g butter, chopped
  • 400g white chocolate, chopped
  • 215g (1 cup) caster sugar
  • 3 eggs, lightly beaten
  • 2 tsp vanilla extract
  • 150g (1 cup) self-raising flour
  • 75g (½ cup) plain flour
  • 80g (2/3 cup) almond meal
  • 235g (1 1/3 cups) Sunbeam Raisins
  • 50g (1/3 cup) Sunbeam Slivered Almonds
  • Icing sugar, to serve

Instructions

  • Preheat your oven to 180°C (350°F). Line a 20x30cm baking pan with parchment paper.
  • Melt the butter and white chocolate together in a bowl over simmering water until smooth. Let it cool slightly.
  • Add the caster sugar, eggs, and vanilla extract to the melted mixture. Stir until well combined.
  • Fold in the self-raising flour, plain flour, and almond meal until smooth. Mix in the raisins and slivered almonds.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 30-35 minutes or until a skewer comes out clean. Let it cool completely before dusting with icing sugar.
