- 8 (8-ounce) containers candied cherries
- 4 (8-ounce) containers candied mixed citrus peel
- 8 (2.25-ounce) packages blanched slivered almonds
- 8 cups raisins
- 4 cups dried currants
- 4 cups dates, pitted and chopped
- 2 cups brandy
- 10 cups all-purpose flour, divided
- 4 teaspoons ground cloves
- 4 teaspoons ground allspice
- 4 teaspoons ground cinnamon
- 2 teaspoons baking soda
- 2 teaspoons salt
- 3 cups molasses
- 3 cups apple juice
- 4 cups unsalted butter, softened
- 8 cups packed brown sugar
- 24 large eggs
Instructions
- Soak the fruits (cherries, citrus peel, almonds, raisins, currants, and dates) in brandy overnight.
- Preheat the oven to 300°F (150°C) and prepare baking pans with parchment paper.
- Mix 8 cups of flour with spices, baking soda, and salt. Set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time.
- Gradually incorporate molasses, apple juice, and flour mixture.
- Toss soaked fruits with the remaining flour and fold into the batter.
- Pour the batter into prepared pans and bake for 3–4 hours or until a toothpick comes out clean.
- Cool completely before wrapping in foil for storage.

- Store in a cool, dry place for up to three months.
- Feed the cake with brandy every two weeks for deeper flavor
