  • 4 (8-ounce) containers candied mixed citrus peel
  • 8 (2.25-ounce) packages blanched slivered almonds
  • 8 cups raisins
  • 4 cups dried currants
  • 4 cups dates, pitted and chopped
  • 2 cups brandy
  • 10 cups all-purpose flour, divided
  • 4 teaspoons ground cloves
  • 4 teaspoons ground allspice
  • 4 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 3 cups molasses
  • 3 cups apple juice
  • 4 cups unsalted butter, softened
  • 8 cups packed brown sugar
  • 24 large eggs

Instructions

  • Soak the fruits (cherries, citrus peel, almonds, raisins, currants, and dates) in brandy overnight.
  • Preheat the oven to 300°F (150°C) and prepare baking pans with parchment paper.
  • Mix 8 cups of flour with spices, baking soda, and salt. Set aside.
  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time.
  • Gradually incorporate molasses, apple juice, and flour mixture.
  • Toss soaked fruits with the remaining flour and fold into the batter.
  • Pour the batter into prepared pans and bake for 3–4 hours or until a toothpick comes out clean.
  • Cool completely before wrapping in foil for storage.
