- 2 tablespoons vegetable oil
- 2 pounds pork shoulder (cut into chunks)
- ¼ cup cane vinegar or white vinegar
- ⅓ cup low sodium soy sauce
- 6 cloves garlic (chopped)
- 1 bay leaf
- 2 teaspoons black peppercorns
- 2 teaspoons sugar
- 2 cups water
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add pork chunks and brown on all sides.
- Pour in vinegar and soy sauce, then add garlic, bay leaf, peppercorns, and sugar.
- Stir in water and bring to a boil.
- Reduce heat and simmer for 1 to 1.5 hours until pork is tender.
- Serve hot with rice.
Notes
- Adjust seasoning to taste.
- For a richer flavor, marinate the pork in soy sauce and vinegar for 30 minutes before cooking.
