- 1 tablespoon butter
- 1 cup uncooked quinoa
- 2 cups vegetable broth
- 2 teaspoons chopped garlic
- 2 tablespoons chopped fresh parsley
- ½ tablespoon chopped fresh thyme
- ¼ teaspoon salt
- 1 small onion, finely chopped
- 1 dash fresh lemon juice (Optional)
Instructions
- Rinse the quinoa under cold water to remove its bitter coating.
- In a medium saucepan, melt the butter over medium heat.
- Add the finely chopped onion and garlic; sauté until they become translucent.
- Stir in the quinoa and cook for about 2 minutes, stirring occasionally.
- Pour in the vegetable broth, salt, and herbs. Bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is tender and the liquid is absorbed.
- Fluff with a fork and add a dash of fresh lemon juice if desired.
Notes
For an added depth of flavor, you can substitute half of the vegetable broth with chicken broth.
