Ingredients

  • 1 cup uncooked quinoa
  • 2 cups vegetable broth
  • 2 teaspoons chopped garlic
  • 2 tablespoons chopped fresh parsley
  • ½ tablespoon chopped fresh thyme
  • ¼ teaspoon salt
  • 1 small onion, finely chopped
  • 1 dash fresh lemon juice (Optional)

Instructions

  • Rinse the quinoa under cold water to remove its bitter coating.
  • In a medium saucepan, melt the butter over medium heat.
  • Add the finely chopped onion and garlic; sauté until they become translucent.
  • Stir in the quinoa and cook for about 2 minutes, stirring occasionally.
  • Pour in the vegetable broth, salt, and herbs. Bring the mixture to a boil.
  • Reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is tender and the liquid is absorbed.
  • Fluff with a fork and add a dash of fresh lemon juice if desired.

Notes

For an added depth of flavor, you can substitute half of the vegetable broth with chicken broth.
