Enjoy this refreshing Watermelon Mojito Mocktail, bursting with fresh watermelon, mint, lime, and sparkling water for the perfect summer drink.


Ingredients

  • 2 cups fresh watermelon cubes

  • 12 mint leaves, plus extra for garnish

  • ¼ cup fresh lime juice

  • ¼ cup honey simple syrup (see notes)

  • Lime sparkling water, to top off


Instructions

  1. Prepare the Honey Simple Syrup
    In a small saucepan, combine equal parts honey and water (e.g., ¼ cup honey and ¼ cup water). Heat gently over low heat, stirring until honey dissolves completely. Let cool.

  2. Muddle the Mint and Watermelon
    In a sturdy glass or cocktail shaker, muddle the mint leaves with the watermelon cubes gently to release the mint oils and watermelon juice.

  3. Add Lime Juice and Honey Syrup
    Pour in the fresh lime juice and ¼ cup of cooled honey simple syrup. Stir or shake well to combine.

  4. Strain or Pour Directly
    If desired, strain the mixture into a tall glass filled with ice. Alternatively, pour directly with the muddled bits for extra texture.

  5. Top with Sparkling Water
    Fill the rest of the glass with lime sparkling water. Stir gently to combine.

  6. Garnish and Serve
    Garnish with a sprig of mint and a small wedge of lime or watermelon cube. Serve immediately and enjoy!

Notes

To keep it vegan, substitute honey with agave syrup or simple syrup made with sugar.

For a stronger mint flavor, muddle the mint leaves slightly longer but avoid crushing them too much to prevent bitterness.

Use chilled sparkling water for the best refreshment.

You can adjust sweetness by varying the amount of honey simple syrup to taste.
