Ingredients
Scale
- 4–5 cloves garlic, minced or roasted
- 2 tbsp butter or olive oil
- ¾ cup heavy cream, milk, or plant-based milk
- ¼ cup grated Parmesan or Pecorino cheese (optional)
- ½ tsp salt, or to taste
- ¼ tsp black pepper

Optional Variations
- Vegan: Use almond, oat, or cashew milk; omit cheese or use vegan Parmesan
- Extra cheesy: Add mozzarella, fontina, or more Parmesan
Instructions
- Prepare the garlic.
Mince fresh garlic or mash roasted garlic cloves for a sweeter, mellow flavor. Set aside. - Heat the base fat.
In a small saucepan over medium heat, melt the butter or warm the olive oil until lightly shimmering. - Sauté the garlic.
Add garlic and cook for 1–2 minutes until fragrant but not browned, stirring frequently. - Add cream or milk.
Pour in your choice of heavy cream, regular milk, or plant-based milk. Whisk thoroughly. - Add seasoning.
Stir in salt, black pepper, nutmeg, and herbs if using. - Incorporate cheese.
Add grated Parmesan or Pecorino (or vegan cheese), whisking until fully melted and smooth. - Simmer to thicken.
Cook for 3–5 minutes on low heat, stirring constantly, until the sauce thickens. - Cool and use.
Remove from heat. Let cool slightly before spreading on pizza dough.
Notes
Do not over-brown the garlic; it turns bitter quickly.
For thicker sauce, simmer longer or add extra cheese.
For a looser sauce, add 1–2 tbsp extra milk.
This sauce also works well with pasta, breadsticks, and casseroles.
