Ingredients

  • 1 pound cooked, peeled, and chopped jumbo shrimp

  • ¼ cup chopped red onion

  • 1 medium tomato, diced

  • 1 ripe avocado, diced

  • 2 tablespoons fresh lime juice

  • 2 tablespoons olive oil

  • 1 teaspoon honey or agave

  • Salt and freshly ground black pepper, to taste

  • 2 tablespoons chopped fresh cilantro or parsley

  • Optional: pinch of chili flakes

Instructions

  1. Prepare the shrimp by chopping into bite-sized pieces if not already done.

  2. Dice the avocado and tomato, and finely chop the red onion. Place all in a large mixing bowl.

  3. Whisk together lime juice, olive oil, honey, salt, and pepper to make the dressing.

  4. Add the shrimp to the bowl with vegetables and gently toss with the dressing until evenly coated.

  5. Sprinkle chopped cilantro or parsley on top and add chili flakes if desired.

  6. Serve immediately or refrigerate for 10–15 minutes to let flavors meld.

Notes

For best freshness, prepare avocado and vegetables just before serving. Pair with crusty bread or serve over mixed greens for a heartier meal. Store leftovers in an airtight container for up to 24 hours.
