Zucchini Hamburger Casserole

Description

A hearty, cheesy casserole made with layers of zucchini, seasoned ground beef, and tomato sauce. Comforting, low-carb, and family-friendly.


Ingredients

  • 2 large zucchini, thinly sliced

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 cups tomato sauce

  • 1 tsp Italian seasoning

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 2 cups shredded mozzarella cheese

  • 1 cup shredded cheddar cheese

  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Slice zucchini into thin rounds or strips, sprinkle lightly with salt, and pat dry to remove excess moisture.

  3. Heat olive oil in a skillet, add onion and garlic, and sauté until softened. Add ground beef and cook until browned.

  4. Stir in tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.

  5. Layer half of the beef mixture in the baking dish, followed by zucchini slices and a sprinkle of cheese. Repeat layers, finishing with cheese on top.

  6. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 15–20 minutes until cheese is golden and bubbly.

  7. Let rest 10 minutes before serving for clean slices.

Notes

For extra creaminess, add ricotta or cottage cheese between layers. Store leftovers in the refrigerator up to 4 days or freeze unbaked casserole for up to 2 months. Pairs well with salad or garlic bread.
